Oat Banana Bread
This moist banana bread comes together in a matter of minutes and requires only a few basic ingredients. This recipe is also free from all major allergens, just be sure to source oats that are certified gluten-free. There are two methods for preparing this loaf: either manually mixing the ingredients with a wooden spoon which will create a chewier consistency, or using a food processor to blend everything into a smoother batter. It comes down to texture preference so I suggest trying both methods to see which you prefer!

INGREDIENTS
2 Flax Eggs (2tbsp Flax Meal + 5tbsp Water)
4 Ripe Bananas (3 for the mixture and 1 for garnish)
2 Cups Gluten-Free Oats
¼ Cup Maple Syrup
1tsp Baking Soda
Cinnamon
Salt
INSTRUCTIONS
Preheat oven to 175ºC/350ºF.
Prepare your flax eggs in a small cup and set aside allowing to thicken.
Peel and mash 3 bananas in a bowl.
Add all listed ingredients and mix to combine, or blend everything in a food processor if you prefer a smoother texture.
Grease an 8-inch loaf pan (I used a brush dipped in coconut oil).
Pour the mixture into the pan.
Slice the remaining banana in half lengthwise and lay on top of the mixture.
Bake for 40 minutes until golden and a skewer comes out clean.
Cool on a rack until ready to store or serve.
