Fibre Bread Rolls
When you make the switch to a gluten free diet, it often means giving up one of life’s greatest luxuries: warm bread rolls. With a crispy exterior and soft, spongy interior, these gluten free rolls will satisfy any bread craving. They also happen to be packed full of fibre, which is an essential part of maintaining a healthy diet.
8 Rolls
INGREDIENTS
2 Flax Eggs (2tbsp Flax Meal + ⅓ Cup Water)
½ Cup Almond Meal
½ Cup Rice Flour
¼ Cup Psyllium Husk Powder
1tsp Baking Powder
Pinch of salt
¼ Cup Coconut Oil
1 Cup Boiling Water
INSTRUCTIONS
Preheat the oven to 350ºF (175ºC).
Make your flax eggs and set aside allowing the mixture to thicken for a few minutes.
Combine all the dry ingredients in a bowl.
Add the wet ingredients and work into a dough.
Use your hands to form 8 balls.
Either lay rolls on a lined baking tray, or drop them into a greased muffin pan.
Bake for 50 minutes until the exterior is golden brown.
Cool on a rack for a few minutes before enjoying.
