Granola Cookies
If breakfast was a cookie, this is what it would look like. Loaded with seeds, coconut, and dried fruit with absolutely no added sweetener. Delicious, healthy, and free from all major allergens! These can easily be adapted based on personal preference and what you happen to have in the kitchen pantry.

INGREDIENTS
2 Ripe Bananas
1 ½ Cup Shredded Coconut
½ Cup Flax Meal
¼ Cup Pumpkin Seeds
¼ Cup Sunflower Seeds
¼ Cup Seed or Nut Butter
⅓ Cup Dried Fruit (some favourites include raisins, cranberries, or chopped dates)
INSTRUCTIONS
Preheat oven to 175ºC (350ºF).
Mash the bananas using a fork.
Combine all ingredients in a bowl, using your hands to really work the seeds and dried fruit into the mixture.
Let the dough rest for 10 minutes so that the flax can absorb any liquid.
With damp hands, form the dough into balls and flatten slightly to form discs.
Bake for 15 minutes until golden.
